Greek Yogurt Dough Cinnamon Rolls

Using my obsession with Greek yogurt dough to create the ultimate healthy, delicious and fluffy cinnamon rolls! Get ready to bake a batch that tastes like a weekend splurge but can be enjoyed any day of the week!

Ingredients
  

  • 1 1/2 Cups plain Greek yogurt low-fat, low-sugar
  • 1 1/2 Cups flour
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 tbsp butter melted
  • 1/4 cup xylitol or other favorite sweetener
  • 1 tbsp cinnamon
  • 3 tbsp plain Greek yogurt for frosting
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • milk splash for consistency if needed

Method
 

  1. Mix together 1 1/2 cups Plain Greek yogurt with 1 teaspoon vanilla extract until well incorporated.
  2. Add in flour, baking powder, and salt. Mix together! I like to use my (clean) hands to really get it mixed into a nice ball.
  3. Place ball on a floured surface and knead with a little flour at a time until it's not super sticky anymore.
  4. Making sure your surface is still floured, use a rolling pin to roll out into a nice rectangle shape. About a 1/2 to 1/4 inch thick and about 8 inches long.
  5. Mix together melted butter, cinnamon and xylitol (or other sweetener).
  6. Spread on rolled out dough evenly.
  7. Roll up dough the long way.
  8. Cut into about 1 inch even pieces (about 8).
  9. Place in lined or sprayed baking dish.
  10. Bake at 375 for about 20 minutes (until golden brown on top and done all the way through!)
  11. Allow to cool while you mix up frosting.
  12. Mix together 3 tablespoons of plain Greek yogurt with 1/2 teaspoon of vanilla extract and powdered sugar. Can add a splash of milk if you need for consistency.
  13. Spread over rolls.
  14. Enjoy!
